Easter Egg Rocky Road

So it turns out… my kids don’t like to actually eat the Easter chocolate, and we now have a bazillion* Easter eggs to get through.

I turned to the old trick of using up Easter eggs to make rocky road today, and boy oh boy was it a good decision! The monotony of egg after egg is now broken up by bites of this flavoursome goodness. Lots of requests for the recipe, it was a bit of this and a bit of that so here’s my best attempt at remembering what I used!!

Easter egg rocky road

– 20 medium chocolate eggs (approx 300g)

– 1 bag raspberry lollies

– 1/2 bag marshmallows

– 2 small handfuls of unsalted peanuts

■ Melt the chocolate in the microwave in 30 sec bursts, stirring between. Once melted, add all your mix ins and stir through. Pour into tray and set in fridge.

■ add in any mix ins you like/have on hand! I chopped my marshmallows and raspberries in half as personal preference.
